The time is right for dairy-free ice cream

Now that August has begun, I thought I would share one of my favorite recipes to beat the heat: dairy-free strawberry ice cream. For those who are lactose intolerant or prefer a dairy-free diet, traditional ice cream can be off limits. Fortunately, dairy-free alternatives have come a long way, and making your own is easier than ever. 

This dairy-free strawberry ice cream recipe is not only simple to prepare but also deliciously creamy and bursting with fresh strawberry flavor. With just four ingredients, you can whip up a batch of this refreshing treat that everyone can enjoy.

1 pound (16 ounces) strawberries

1 14-ounce can full-fat coconut milk

1/2 cup granulated sugar

1 tablespoon vanilla extract

Start by washing and hulling the strawberries. This means removing the green tops and any stems, ensuring that your ice cream is smooth and free of unwanted bits.

 Place the strawberries, coconut milk, sugar and vanilla extract into a blender. Puree the mixture until it is smooth and creamy, which should take about two minutes. The coconut milk provides a rich, creamy base, while the strawberries add a natural sweetness and vibrant color.

Pour the blended mixture into a loaf pan. This shape is ideal for freezing and later scooping out the ice cream. Place the pan in the freezer. 

For a soft-set ice cream, freeze for at least five hours. If you prefer a firmer texture, leave it in the freezer for six or more hours.

If you freeze the ice cream overnight or for an extended period, it could become very hard. Instead, let the ice cream sit at room temperature for a few minutes before serving. This will allow it to soften slightly and become more scoopable.

This dairy-free strawberry ice cream is a perfect summer dessert. The combination of ripe strawberries and creamy coconut milk creates a rich, luscious texture that’s hard to resist. Plus, it’s free from dairy, making it suitable for those with dietary restrictions.

Feel free to experiment with this recipe by adding other ingredients like chocolate chips, fresh mint or even a swirl of strawberry puree for an extra burst of flavor.
