I love fall weather—cool, crisp mornings and chilly evenings spent wrapped in sweaters. Perfect for soups, chilis and more. This light lasagna soup recipe is a family favorite and I hope you will give it a try.
1 package ground chicken, 99 percent fat-free
1 package ground turkey, 99 percent fat-free
1 24-ounce can tomato sauce, no sugar added
36 ounces chicken broth
1/2 package lasagna noodles, noodles broken up
1/2 teaspoon crushed red pepper flakes
1 teaspoon Italian seasoning blend
1 small container part-skim ricotta cheese, for garnish
In a slow cooker, combine all ingredients except ricotta cheese.
Cook on high for 3 hours.
Serve with a dollop of ricotta cheese.

The New Cochecton Youth Commission is holding a fall event for Cochecton youth on Saturday, October 29 at 11 a.m. It’s a fun day of trick-or-treating and other activities for Cochecton youth. This event is for Cochecton youth only and all Cochecton youth must be signed up in advance to participate. Contact Heather at 845/796-6976 with questions.
