Deviled eggs, with added goodness

Easter has given us plenty of leftover hard-boiled eggs.

Besides making the traditional deviled eggs, why not try adding cottage cheese and sour cream to the deviled eggs?

Cottage cheese and sour cream have several nutrients that make it worth adding them to your diet. They are excellent sources of calcium, which plays an important role in maintaining bone health.

And did you know that milk has 13 essential nutrients? It has protein, calcium, phosphorus, vitamin A, vitamin D, riboflavin (B2), niacin (B3), pantothenic acid (B5), cobalamin (B12), iodine, potassium, selenium and zinc. Every essential nutrient found in milk will help your body in so many ways.

Delectable Deviled Eggs

  • 6 large eggs, hard-cooked
  • 1/4 cup cottage cheese
  • 1/4 cup sour cream
  • 1 teaspoon white vinegar
  • 1 teaspoon mustard
  • 1 tablespoon mayonnaise
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Cut the eggs in half lengthwise, being careful to remove the yolks without breaking the white part. Place the white parts cut side up on a serving platter. Place the yolks in a food processor bowl or a small bowl. Add the remaining ingredients and process in the food processor or mash with fork until smooth. Spoon or pipe a heaping tablespoon of the yolk mixture into each white center. Chill before serving, if desired. Enjoy!
